Strawberry Cucumber Salad with Feta and Fresh Herbs

I actually made this dish for myself. That’s right friends. It wasn’t a side dish to serve at dinnertime or a clever new attempt to get my family to eat their fruit and veggies. As a mom, we often (like all the time) plan our meals around our family which often drastically limits our options.

So, when I overheard someone talking about a strawberry cucumber salad with feta that they enjoyed at a party it got me thinking. Why don’t I make a decadent and delightful salad that I know I would love? I grabbed the strawberries, cucumber, and feta the following day at the grocery store and then headed out to my garden for some fresh herbs. Use whatever herbs you wish. I was so excited that for the first in several years, all the herbs I planted were thriving! I chose dill, parsley, and mint for my salad and it was perfect.

I served my strawberry cucumber salad with feta and fresh herbs in a beautiful bowl, used my favorite cloth napkins, and savored every delicious bite.

Strawberry Cucumber Salad with Feta and Mixed Herbs

This fresh and decadent salad will be your new favorite summer salad

Ingredients Method Notes

Ingredients
  

  • 4 Persian cucumbers organic and sliced
  • 1 pint Strawberries organic and cut in half. *wash first
  • 1/2 Red Onion chopped
  • 1/2 cup Feta cheese block cut into cubes
  • 1/3 cup Olive oil extra virgin
  • 1/3 cup White balsamic vinegar
  • 2 tbsp lemon juice
  • 1/3 cup Mixed fresh herbs of your choice ex: dill, mint, parsley or just use mint

Method
 

  1. Combine salad ingredients into large bowl
  2. Combine dressing ingredients in separate bowl and wisk together until well blended.
  3. Pour over salad and toss gently. Best when served soon after adding dressing.

Notes

I love this salad because it is easy, healthy, and can look fancy if a friend stops by for lunch. I make it often. Drop me a note if you give it a try. 
You know the saying, its the little things that make a difference? Well, it is especially true when selecting ingredients for your favorite recipe.
If you can, always choose organic and a good quality extra virgin olive oil. The end result will truly be worth it. 
Adding fresh herbs adds so much flavor and additional nutritional value to your dishes. This year I have basil, dill, oregano, parsley, and chives in my garden and I love that I can walk right outside and pick what I need! (note to self, plant rosemary next year)

Here’s the recipe that went viral that I had to try!

It’s seriously so good and easy 
and will satisfy your sweet tooth with every delicious bite 
No sugar 🥳

6 ingredients ⬇️

1/2 cup vanilla protein powder. I used Arbonne meal replacement.
1/2 cup almond flour
1/4 cup raw honey 🍯 
1/4 cup melted coconut 🥥 oil 
Sprinkle of sea salt 🧂 
A few dark chocolate 🍫 chips 

Mix all ingredients in a bowl and press out on parchment paper
Melt chocolate chips spread on top with a sprinkle of sea salt and freeze for two hours
Break apart into pieces and enjoy 😉
