Spring Glow Strawberry & Salmon Power Bowl

Spring Glow Strawberry & Salmon Power Bowl

There’s something about spring that makes us crave lighter, fresher foods. This colorful bowl is packed with ingredients that support healthy aging—protein for muscle health, healthy fats for heart and brain support, fiber for digestion, and antioxidant-rich fruits and vegetables that help nourish your body from the inside out.

Ingredients Method Notes

Ingredients
  

  • 2 Salmon fillets (about 4-6 oz each)
  • 4 cups Fresh baby spinach
  • 1 cup Cooked quinoa
  • 1 cup Sliced strawerries
  • 1 cup Sugar snap peas
  • ½ Avocado
  • ½ cup Sliced amonds
  • 2 tbsp crumbled feta cheese optional
For the dressing:
  • 3 tbsp Olive oil
  • Juice of 1 lemon
  • 1 tsp Honey
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Method
 

  1. Season salmon lightly with salt and pepper and bake at 400℉ for about 12-15 minutes or until flaky. (do not overtake)
  2. Steam sugar snap peas for 2-3 minutes so they stay bright and crisp
  3. Arrange spinach in bowls and top with quinoa, strawberries, peas, avocado, almonds, and feta.
  4. Place salmon on top.
  5. Whisk dressing ingredients together and drizzle over bowls.
